Cast Iron Salmon with Tomato Basil Salsa

Serves: 4 people

Ingredients

24 oz. Monterey Bay Salmon
1/2 tsp oregano
1/4 tsp rosemary
1/4 tsp red pepper flakes
2 tomatoes, chopped
1/4 cup fresh basil, chopped
2 tablespoons balsamic vinegar
2 tsp olive oil
Salt and pepper

Preparation

Place your cast-iron skillet into a cold oven and heat to 450˚F.

Combine oregano, rosemary, red pepper flakes for spice mixture.

Brush the salmon with olive oil and sprinkle with the salt, pepper and spice mixture.

Once the oven has come up to temperature, remove the cast iron skillet and lay the fish skin side down.

Return the skillet to the oven and cook uncovered for 14 to 18 minutes, or until a thermometer reads 125˚F.

Toss together tomatoes, fresh basil, balsamic vinegar, olive oil, salt, and pepper.

Serving

Plate salmon and top with tomato basil salsa.
