Caesar Dressing with Anchovy

Prep Time: 5-10 minutes
Serves: 4 people

Ingredients

1 large clove garlic, crushed or grated

3 tablespoons olive oil

2 teaspoons good balsamic vinegar

1 tablespoon anchovy paste or finely chopped anchovies (or more to taste)

1 tablespoon Worcestershire sauce

Juice of 1 lemon

1/4 cup grated Parmesan cheese (optional)

Preparation

Add garlic to a large salad bowl. Then, add olive oil and stir and let sit for a few minutes.

Add vinegar, anchovy, Worcestershire, and lemon juice, and stir.

For a thicker dressing, add the optional Parmesan cheese. You can let this sit while you prepare the rest of your meal.

Dip a lettuce leaf in to taste your dressing. If it doesn't taste fiercely of lemon juice, garlic, and anchovy, add more of those, to taste. The flavor of the balsamic should be less strong.

Use this dressing with your favorite Caesar salad ingredients. Be sure to wait until just before serving to toss the salad. Top with more Parmesan cheese and cracked pepper. Enjoy!
