Tortilla Rockfish from Omega Gold Seafood

Simple and Delicious - this local rockfish recipe will wow your tastebuds and is coming to us straight from local fishers, Austin Walker and Liza Star of Omega Gold Seafood based in Moss Landing, CA. Try it tonight for dinner!

Ingredients:

- Raw local rockfish fillets

- Garlic Salt

- 1 egg beaten

- crushed tortilla chips

- Corn Tortillas

- 2 tbls Olive or coconut oil

Fresh Pico de gallo (mix below)

-2 heirloom tomatoes: diced

-1/2 sweet or white onion: diced

- Fresh cilantro: minced

- 1/2 jalapeno: minced

- Dash of salt

- Fresh squeezed juice from one lime wedge

- Let set for 15 minutes

Directions:

- Set rockfish filet aside

- Beat egg with garlic salt

- Baste or submerge fish fillet in egg and batter in crushed tortilla chips on both sides

- Heat oil in cast iron skillet or saucepan on high

- Brown fish fillet in searing skillet of olive oil.

- Serve in heated corn tortillas topped with fresh pico de gallo
